As promised here is that recipe I mentioned that would go well with my chicken and sauce recipe from a couple posts ago.
Phase 1
Prep: 10 Minutes Cook: 28 Minutes
1 Large eggplant, cut into bite-sized pieces
1 Medium red pepper, cut into 1/2-inch-wide strips, then cut crosswise in half
1 Medium onion, cut into 1/2-inch-thick slices
1 Medium zucchini, cut into 1/2-inch-thick slices
1/4 Cup light italian dressing
1 Can low-sodium diced tomatoes, undrained
1/2 cup 2% Milk Shredded Reduced Fat Mozzarella Cheese
2 Tbsp. 100% Grated Parmesan Cheese
MIX eggplant, red pepper, onion, zuchini and dressing in large skillet; cook and stir on medium-high heat 6 to 8 minutes or until vegetables are tender and lightly browned.
ADD tomatoes; cook 15 minutes, stirring occasionally.
TOP with cheeses; cover. Cook an additional 5 minutes or until cheese is melted.
Makes 8 servings, about 1 cup each.
Now, My mom made this, and she doesn't like zucchini, so she subbed in Yellow Squash. Which is fine because you can have that. Now I had never touched eggplant prior, on the basis that it was purple and had a weird name and was a veggie. But, beggers can't be choosers, so I tried it, and I really liked it in this. The other flavors really accented it and made it sweet almost. The pepper (mom used Green instead) gave just a little spice. All in all it was very very good.

Moving on... was anyone else shocked that Constantine went home last night? Yeah, I hope so. I'm saddened by America. Anthony and Scott deserved to go long before Constantine... well, the two consecutive weeks.
In a perfect world it'd have gone Scott, Anthony, Constantine, Vonzell, and left Bo and Carrie as the top 2. And I honestly can't choose between the two of them.
