a few things.
on the baking front
finished two sets of cupcakes for a triplets' 7th birthday party this past sunday. vegan oreo (which is becoming a good standby for a quick cake) and strawberry meringue buttercream cakes. the heat did not mix well with meringue. same day as the party, i met with a business advisor and she is the one investing the time and money into getting this bakery opened. in fact, i think this week we are taking a look at the commercial kitchen i have been told i can use when they are closed for business. things on that front seem to be working out well, but i am still skeptical, as i should be considering all the offers that fell through this past year. all i can say is that i am terribly excited and equally as nervous. i have never before in my life had so many people working towards helping me get my business started before.
portland
it's been an entire year since i moved back to spokane from portland. there are days where i miss that city so much, but i really have learned to love spokane again and appreciate the good things about it. i am very happy here, and while i do plan on opening the bakery here and maybe settling for a few years with a house, i can see myself back in portland to live out the rest of my life. i really do love it there afterall. i haven't been back at all, but at the end of august i am going for a week and hopefully meeting up with a few friends.
lately:
picking fresh strawberries,getting fresh eggs from my friend's chickens, hanging out with good lady friends and making dinner,going to the lake, riding my bike, realizing i lead a pretty good life.
