Locke/Celes... Even if they broke up I think they'd stay friends and important people in eachother's lives.
Cloud/Tifa probably work out their issues and stay harmoniously together until they get old and die of natural causes. They're adorable yet boring like that.
Squall/Rinoa might last and it might not. I don't like to hate on Rinoa as much as everyone else does. I'm not completely sure it will last, but I don't think that really matters either. Squall will have learned important things and taken great steps towards recovering from his chronic manpain. If they break up and he moves on I'm sure they'll always have a soft spot for eachother.
Zidane/Garnet is trufax the best canon couple. Given how far the epilogue is after the end I think they already, to some degree, stood some tests of time? I also think Zidane would make great king consort material if people could get over his dodgy background.
Tidus/Yuna... I can't accept Tidus ever being not-dead. Skimming your response, it would be nice if she had a kid from him or something that she could carry forward with her as like a physical memory where there is none. I'm most unsure about this one, I think. Supposing Tidus can't come back? I'm not sure she's the type of person to find someone else and move on.

Except for Tidus/Yuna. ;_; HE WILL NEVER DIE DAMMIT, HE'S IMMORTAL FROM NOW ON :P :P :P
My main concern about him coming back is like, how the hell are they gonna explain that to Spira? Wouldn't the Spirans be like, "dude, what? I know you saved the world, but you can't just come back to life, that's no fair. YOU'RE AN UNSEEENTT, DIEEEE" or something.
Or maybe I'm just a pessimist....
