Just made this last night, and am looking forward to leftovers (or a fresh batch!) tonight!
For one or two folks.
Take a cup of Kitchen Basics Chicken broth
Add 1/2 cup of Costco roasted Chicken breasts (tear up larger chucks to bit sized)
1 tsp of butter (optional)
Heat to simmer, and then spoon out the chicken bits and put them aside momentarily.
Add 1/4 cup of potato flour to the heated broth and stir well. Once all the flour is in solution, add back the chicken.
Heat to boil and add some veggies to taste (we used baby peas, but whatever floats your boat).
Serve over rice or Gluten Free pasta.
The broth is pretty high in salt and other flavors, so try it without any added salt or pepper before you over season it. If you find it too strong a flavor, try cutting back on the broth to 3/4 cup and adding 1/2 cup of milk. (something we're going to try next time around!)
(I didn't pull the chicken out last night and it was ok, but stirring in the flour is a bit of a pain, when you get it mostly done, you can't tell the difference between the chicken bits and the flour lumps :)
