Tonight, we had chicken enchiladas & they turned out FAB! I made 10 of them - enough to eat for 2 days!
Here's the Recipie for: CHICKEN ENCHILADAS
5-chicken breasts
1-doz. flour tortillas
1-pt. sour cream
1-c. sour cream
1-c. grated cheddar cheese
1-c.grated monterey jack cheese
1-sm. can chopped black olives (optional)
1-(4oz.) can green chilis
3/4-c. chopped onion
2-cans cream of chicken soup
Directions:
Cook chicken, chop in small pieces. Mix sour cream and soup. Add chicken, chiles and onion. Reserve 1/3 of mixture and cheese. Add remaining cheese to mixture. Fill tortillas, roll and place seam side down in greased pans. Use about 1/4 c. mixture per tortilla. Spread reserve mixture on top and sprinkle with saved cheese. Cover and bake at 325 Degrees for 45 minutes to 1 hour.
Here's the Recipie for: PRESIDENT REAGAN'S FAVORITE MACARONI AND CHEESE
1/2 lb.-macaroni, boil in water, drain
1-tsp. butter
1-egg, beaten
3-c. grated sharp cheese (reserve 1/2 c. for top)
1-tsp. dry mustard, dissolved in 1 T. hot water
1-tsp. salt
1-c. milk
Directions:
Cook macaroni, then stir in butter, egg and cheese. Then place in buttered casserole dish. Mix together mustard, salt and milk and pour over pasta mixture. Sprinkle with reserved cheese. Bake at 350 Degrees for 45 minutes or until custard is set.
Here's the recipie for: FROZEN PEANUT BUTTER PIE
1-c. sugar
6-oz. cream cheese
3/4-c. chunky peanut butter
1/3-c. milk
9-oz. cool whip
1-tsp. vanilla
Pre-made graham cracker pie crust
Chocolate syrup for serving
Directions:
Beat all ingredients together, pour into crust, freeze. Drizzle with chocolate syrup when serving.
Here's the recipie for: BUFFALO CHICKEN DIP -this is AWESOME
1-brick cream cheese
3/4-c. Franks hot sauce
3/4-c. ranch dressing
1-lg. can chicken (you can use Swanson and/or other brands)
1-2-c. shredded cheese (recommended shredded Pepper Jack)
Directions:
Layer bottom of baking dish with brick of cream cheese. Mix together: hot sauce, ranch dressing and can of chicken. Pour over top of cream cheese and top with shredded cheese. Bake at 350 Degrees for 20 to 25 minutes. Serve with Fritos.

My arm/wrist area hurts because of the kickboxing class that I have been taking. You see, this is why I wear wrist wraps in class just for that extra little support. It's from all that damn punching that I've been doing. ACk! Another reason for me not to do push-ups.! ;) ha!
