Ah good. An easy one.
Today I consumed, in order of consumption:
- One cup of tea
- Two slices of granary toast with butter (breakfast of champions)
- Half a pumpkin pakora, half a broccoli pakora and half an onion bhaji, smeared with lime pickle, from a posh foodie van in Lewes
- Half a posh organic pork pie, also from Lewes
- One large cup of strong coffee
- One slice of granary bread with butter, cheese and mango chutney
- Large plate of homemade aubergine and courgette parmigiana and half a sundried tomato foccacia.

Cut aubergines and courgettes into slices, layer up in a colander with salt in between the layers and leave to... de-salt for like an hour.
Then, later, chop up a large-ish onion and sweat it in olive oil with a lid on the pan for a few minutes. Chuck in a couple of chopped cloves of garlic and a pinch of chili. When it's all soft, throw in some red wine and let it reduce. Then add a tin of tomatoes, some tomato puree and some tomato juice or water, salt, pepper, a bay leaf, some dried oregano and a pinch of sugar. Simmer until cooked and smelling yummy.
Rinse and drain the vegetables, then fry in a little oil in a very hot pan until blackening on the outside. THIS WILL PRODUCE A LOT OF SMOKE. Put the extractor fan on.
Layer it all up in an ovenproof dish. You also need mozzarella and parmesan cheese here. Go in whatever order you like - I usually go tomato, veg, cheese and so on, ending with cheese. But YMMV. Whack in oven (200C?) for half an hour.
Eat that motherfucker. It will be ace.
