Still feeling empty and disappointed with American food... and I was NEVER of the all too common mindset that a big piece of meat makes a meal. For me, meat was always the bit of flavor that made the veggies go down smoothly. I should have been born Thai. Every meal I would see those diminutive (and very healthy) little people consume about a quarter of their body weight in raw veggies as they grazed on lettuces, cabbages and long beans to cut the heat of whatever spicy hot dish they were working on. No dressing, not even salt... didn't need it. When your mouth was on fire from eating SomTam or spicy fermented fish it felt completely natural just to stuff a handful of raw greens in there and let their natural flavor mix with the fading heat.

When my lady gets here I am going to suggest that she run a short course through the Union mini-courses system on Thai Cooking to Lose Weight and Stay Healthy. I never saw any overweight natives in Thailand, yet they all eat crazy huge amounts of food at every meal. But you do have to work up your tolerance to exceptionally spicy fare...
