I've had the BtVS theme song as my ring tone forever. (And of course, I have 100% no shame about this, whatsoever.) I had never cooked with pomegranates either, but it worked v. well! I used the seeds and I also made caramel-y pomegranate molasses stuff for the filling by boiling down pomegranate juice with lemon and brown sugar. And today I put them in muffins and those were lovely too.

The seeds do stay kind of crunchy in the muffins, so you know. I like it though. I made my muffins with a bit of vanilla and ginger for flavoring. And I am realizing now that I probably should have written up THAT recipe instead of the pie one (see: my journal). I hope you don't feel pressured to make that crazy pie!

I would not turn down your muffin recipe at some point. ;D I have a good recipe for cranberry that I was thinking might translate. And yeah, I was wondering about the texture, but since they're crunchy if I eat them raw, it doesn't really matter if they're crunchy in muffins too, heh.
