Once a precious part of his happiest years, she became an almost painful reminder of them after Oz’s disappearance, and that on top of his guilt at failing her and her family created a sizeable distance between them as he pulled away. It was boredom and bad mood that first lead Gil to indulge Sanji in conversation, but the discovery of a number of common points has spurred a more genuine interest. Having someone on hand to discuss the mysteries of Somarium and commiserate about unruly charges with is something he might just grudgingly admit to finding agreeable; that the other man has been the participant in some more serious discussions has begun to lay the foundations for a distant respect as well.
