Here we go, 3 recipes
The first is a cheap, ghetto fabulous casserole XD
Cheap Dinner Casserole
12 inches kielbasa (or 3 hot dogs)
1 1/2 cups pasta, uncooked
1/4 cup chopped onions
1/2 cup cheese, grated
1 tsp garlic powder
salt & pepper
1 tsp oregano
1/2 cup breadcrumbs
1 Cook & drain pasta. Put in small casserole dish
2 Slice kielbasa & cook for a few minutes. Add to pasta
3 Add chopped onion to pasta & stir.
4 Mix in all spices & cheese, & stir well
5 Top with bread crumbs
6 Bake at 375° for 10 minutes
Next something a little nicer up the gourmet scale
Tomato Beef Noodle Soup
8 oz uncooked elbow macaroni or other small pasta
1 lb ground beef
2 tsp olive oil
1 cup chopped onions
64 oz tomato vegetable juice, such as V8
1 tbs chili powder
1 tbs sugar
1 pinch pepper
1 Cook the pasta according to instructions
2 Heat oil in a large soup pot over medium heat. Cook onion & meat until meat is fully browned, 7 to 8 minutes. Drain any extra fat
3 Add tomato-vegetable juice, chili powder, sugar, & pepper. Stir well & bring the soup to a boil.
4 Reduce heat to medium-low & cook at a slow boil for 5-7 minutes
5 To serve, spoon some macaroni into each bowl & ladle the soup over it.
& finally, something that tastes like you'd spend $10 for it at a restaurant (I get a good deal on shrimp occasionally & I stock up as much as I can fit in my freezer, just for this dish!)
Shrimp Scampi
4 cloves garlic, minced
1/4 cup butter, cubed
1/4 cup olive oil
1 lb shrimp, cleaned
1/4 cup lemon juice
1/2 tsp pepper
1/4 tsp oregano
1/2 cup parmesan cheese
1/4 cup dry breadcrumbs
1/4 cup minced parsley
hot cooked pasta
1 Saute butter & oil. Stir in shrimp, lemon juice, pepper, & oregano
2 Cook, stirring constantly, for 2-3 minutes
3 Transfer to casserole dish & sprinkle with parmesan cheese, bread crumbs, & parsley
4 Broil in oven for 2-3 minutes or until topping is golden brown
5 Serve over pasta
