Alright, so everyone loves food. Some more than others (I'm looking at you, me). Everyone has awesome cheap dinner ideas too. It might not be the healthiest but it doesn't cost much and it's tasty ( Read more... )

Tuna Casserole:

1 can of tuna
1/4 cup of mayo/miracle whip
1 can of cambell's cream of chicken soup
1/4 cup of milk
1/4 tsp celery salt (optional)
1 1/2 cup of macaroni
1 small bag of shredded chedder cheese (about 2 cups)
bread crumbs

Boil macaroni in water according to directions on box.
Drain water from tuna and mix with mayo in large casserole dish. Add soup, milk and celery salt and mix. Stir in cooked noddles evenly with soup and tuna mix. Add cheese over top in an even layer. Sprinkle with breadcrumbs and bake in oven at 350 degree for 30-40 mins.

Goes well with cresent rolls and frozen or canned peas.

Ooh, minus the macaroni, and the shredded cheese, add a chopped up boiled egg or two, a little garlic powder. Maybe some relish to taste, if you're into relish. Throw it on a couple slices of warm toasted whole-wheat bread with a slightly melty slice of swiss, and a slice of tomato, and this would probably convert to a great tuna melt.

Exact measurements? I don't have them. I've never actually made one myself, but Jason's Deli makes a mean tuna melt. I may have to do some experimenting at home sometime soon.

Tuna Patties:

This is almost the same recipe, sans noodles and cheese.

1 can of tuna
1/4 mayo/miracle whip
bread crumbs
vegatable oil

Drain water from tune. Mix with mayo and add bread crumbs (about 1/4 cup but it can vary). Mix until tuna is the consistancy of playdough. Form into patties (one can should make two medium to large sized patties). Heat vegetable oil on stove in frying pan at medium-high. Cook patties in oil for about 2-3 minutes for each side, until golden brown.

Goes well with instant potatoes and any canned or frozen vegetable.

Mayo + Saltines (not the unsalted type)

It takes a leap of faith to try, but I survived on it more than once

I caught my daughter eating a slab of butter on a saltine yesterday. And she uses butter as a filling inside bread. As in, a butter twinkie.

I caught Brian eating slabs of butter on Ritz crackers a little while back. It was like some creepy "Hunger get what Hunger want!" moment. I don't think he even realized...

I think you've already tried a lot of my poor man's food, but I can always think up some new ones for you. Personally, my favorite is my chicken nugget meal. All you need is cooking oil, salt, pepper, chicken, flour. Add whatever sides you want, but my choice of canned peas and instant potatoes tends to work out well.

You know, with your awesome weight loss, this is making me wonder if I can come up with some cheap AND healthy meals... Since we know most of the normal cheap meals are bad, bad foods usually involving lots of eggs, cheese, bread, noodles, etc and not much else.

1 lb box of spaghetti
As many cloves of garlic as you like (around 3 perhaps)
As much red pepper flakes as you like (about a tablespoon is good)
Olive oil
While spaghetti cooks to al dente in salted water, saute the minced garlic and red pepper flakes in the olive oil until it smells purdy, just a minute or two. If you have any other veggies (olives, celery, mushrooms, bell pepper, greens, etc.) in the fridge that need to be used up, go ahead and then chop them up and throw them in the pan too. Mix the oil/veggies with the drained spaghetti, plus a little bit of the water you boiled the pasta in if it needs it. Top with parmesean and chopped fresh herbs from your garden/windowsill.

Box of Mac n' Cheese (generic works well for this) + can of tuna in water (drained) + a little mayo = creamy tuna pasta heaven. I still make this, even though I don't have to.

Cook the macaroni, drain, and return to pot. Add the drained tuna, some of the cheese packet (adjust to taste, I only use about a quarter of it), and some mayonnaise (also to taste, I use about one good spoonful). Heat on low heat until warm. Serve and enjoy.

Can of cream of mushroom soup + egg noodles (any kind will work) + can of mushrooms = mom's mushroom pasta.

Cook pasta, drain, and return to pot. Add the condensed soup (without any water) and the drained mushrooms. Heat on low heat until warm. Serve and enjoy.
