Black Jack refers to leather tankards used in taverns near the docks. It can also refer to a pirate's flag.
Boucan refers to refers to a grill for smoked meat that has been fire-roasted. It also refers to the meat itself, which was smoked on said grill. When made illegal, it is said that Boucan cooks became buccaneers.
Highland refers to a particular region of Scotland, and the scotch that it hails from.
