I've come up with two different reasonable calorie tasty meal ideas I thought I'd share (remember since I tend toward COE my idea of a reasonable calorie count will be very different then some of yours)
Breakfast
1 serving slow cooked oats with 1 cup plain applesauce and lots of cinnamon. Add a little water and cook it in the microwave. It looks like babyfood but its warm and comforting. (You can use quick cook oats butthe slow cooked oats take longer to digest so you stay full longer) Total is 250 cals.
Dinner
1 bundle bean threads (soak them for 20 minutes and latter put them in the stir fry to finish cooking. Otherwise they are awfully chewy)
1 (or 2) cup(s) pakaged stir fry mix
1 serving tofu
for the dressing
2 tablespoons rice wine vinager
2 tablespoons soy sauce
2 tablespoons worcestershire sauce
2 tablespoons dijon mustard
Defrost your veggies and mix with the tofu and dressing. For the last two minutes of cooking add the bean threads that have been soaking.
Total is approx 320 cals depending on what stir fry mix you use
