I have started reading the book "kitchen confidential" and it is making me miss those long days of working in a kitchen. The heat of the grill the yelling during a rushing, the running around, the stress, the long hours, the dares, the humor, the sing alongs, the pranks, the burns, the many dozens of oysters that were shucked in the given night, the running out of stuff and having to make more in as short of time as possible. What normal person would miss the 10 plus hour days of sweating for hours on end being on their feet running around, cutting up shit or carrying stacks of dishes a couple feet high at times. Or having to grab the edges of counters to slide around corners with out falling. Or being drinched in water or covered in batter. I must be a twisted individual to miss those days.
