Is It Fair for Chefs to Cook Other Cultures' Foods? (I like this article a lot, but towards the end, I just really wish they hadn't talked about USA as a "land of immigrants" and basically discounting Native Americans from the dialogue. I get why they did that but still, I really wonder if that part of the conversation would have gone so much differently if they had kept indigenous populations in mind, especially considering how indigeneity across the American continents winds its way into the race relations of their specific countries.)
