p.s. it is amazing the number of things you can do with a single turkey. thanksgiving dinner plus a week of leftovers with all the sides; turkey sandwiches, quesadillas, and stir fries; use the carcass to make broth, stock, or consomme (i made stock and broth--consomme is a lot of work); then use the results plus leftover meat to make anything from vegetable soup (with leftover summer vegetables i had cubed and frozen), or coconut-curry soup (my mother's favorite), or turkey and dumplings (a culinary riff on the southern classic chicken and dumplings--i make that all the time, so why not try it with turkey?). the secret to getting a quick soup to have a richer mouth-feel is to add a cube of boullion.
