I don't know if you're a Doctor Who fan, but whenever I see someone with a bluetooth headset, I fear that they'll soon be made a Cyberman. Just be careful, is all I'm sayin'.
I may have to have a 'New to Who' Party, wherein I indoctrinate the willing into the awesomeness of the newest incarnations of the Doctor (not that Old School isn't great; this is just a perfect jumping-on point).
Without actually playing around with anything, I can only tell you what I went through with my phone.
I learned (a month before I upgraded) that I needed to wait for my phone to say "Please say a command" and THEN BEEP before I could say the name I wanted to call. Before that, it never understood who I was trying to call.
Also check how well your headset is working. Call someone (by dialing normally) and see how well they can understand you on it. If the other person is having trouble, your phone will too.

I am GOING to be a Doctor Who fan, one day. Once I have the time and attention span to actually sit down and watch some of it...

It was so much easier when I had a phone that let me set up the voice commands myself, instead of just trying to guess from the spelling.
Headset works wonderfully. That was the first thing I tested. :D
