Everything here is extremely easy and can be prepared in 15 minutes or less. It may also be a bit boring (sorry!), but my partner and I make them frequently.

Tortellini Salad:

Ingredients: 1 Cucumber, 1-2 Bell Peppers (any color), 1-2 Tomatoes, 1/2 lb prepackaged tortellini

Dressing: ~1 tbsp olive oil, 2-3 tbsp rice vinegar, oregano, paprika, and cayenne pepper to taste

Chop veggies into bite size pieces while boiling water in a small pot. When water is ready, cook tortellini as per package directions and drain when finished. Throw it all in a bowl or tupperware container and add dressing ingredients on top. Mix until veggies are coated and serve hot or cold.

Butter Noodle:

Ingredients: 1 package dried egg noodles, 2 tomatoes, 1 "spoonful" of butter, grated parmesan cheese and black pepper to taste, raw or steamed veggies of your choice (optional)

Prepare egg noodles in boiling water. Drain and return to pot. mix in butter and stir until noodles are coated and butter is completely melted. Chop tomatoes into bite-size pieces and set aside. Mix in any other veggies and add cheese and pepper. Throw tomatoes on top right before serving so they don't get mushy.

Lemon Pasta:

Ingredients: 2 lemons, 1/3 cup olive oil, 1/2 tsp salt, 1/2 tsp black pepper, red pepper flakes or cayenne pepper to taste, grated parmesan cheese (optional), 1 box dried pasta (~1/2 lb)

Juice lemons into bowl. Add oil, salt, pepper, red pepper, and cheese. Whisk. Prepare pasta as per box instructions, return to pot, mix in contents of bowl. Serve with veggies or salad.

BLT:

Ingredients: Pre-cooked/microwavable bacon, bag lettuce, 1 tomato per 3-4 sandwiches, bread, brown/dijon mustard, pickled banana peppers (optional)

Slice tomato. Toast bread and spread with mustard on one or both sides. Add a thick layer of lettuce to one side. Add tomato slices. Nuke bacon as per package instructions and put 2-3 slices per sandwich. Add pepper slices if desired. Eat.

Box mac-and cheese with steamed broccoli and/or califlower is also a winner on really busy days. :)
