I made dinner last night and wanted to make dessert, but was at a loss of what I could make because Ben's both lactose intolerant and not too keen on dessert. I decided instead I'd go for a healthy thing, and he can eat yogurt, so this is what I did. It was super easy and almost entirely good for you:
1 cup yogurt.
3 eggs.
Powdered Sugar (I didn't measure it, but couldn't have been more than half a cup or so)
1 banana
1 peach
1 nectarine
oatmeal (optional)
graham cracker crumbs (optional)
Preheat oven to 350. Beat the yogurt lightly with a mixer. Throw in the eggs and sugar. Beat until well mixed. Pour into a pie plate. Chop up the fruit thinly. Layer it all on top of the custardy mix (will sink in a little). If you want to add oatmeal for some texture and oatmeal goodness, sprinkle it on at this time.
Put it in the oven for about 20 minutes. Edges will start to bake, but middle will still be mostly soft (though it will harden a little). Cool in refridgerator. Sprinkle with graham cracker crumbs if you want. Serve and enjoy.
