Three kinds of self-saucing pudding I have made this winter:
- Lemon self-saucing pudding
- Prone to a certain lumpiness, but quite delightful anyway. If you blend cornflour and custard powder into a slurry first with a little lemon juice, then blend in all sauce liquid, then pour over, then the sauce will be smoother. Prone to be sharp, so does need cream/ice cream/custard.
- Butterscotch self-saucing pudding
- Also excellent with chopped dates and pecans in batter. Mild/complex enough to eat without other condiments.
- Elaine's Self Saucing Chocolate Pudding
- Old favourite as previously posted. See notes in the source.
NB these are all Australian recipes, so 1 TB = 4 tsp instead of US or UK 3 tsp
