this morning we made the most DE-licious peach cobbler for some friends who came over to brunch. usually i'm not a fan of cobblers, i pick away at the fruit and leave the topping... but this one was the opposite. the biscuit topping is like a crackly-topped, moist underneath, mildly gingery scone. D. modified his famous buttermilk biscuit recipe see for the topping (and i added the crystallized ginger and spiced the peaches).
