I've watched the episode, and had the same thought as you. It seems completely preposterous to me that of all the people the Doctor would make immortal...it would be this random person in a random village, in a random episode. It felt totally out of character. And that's not even to mention the situation with Jack, and the other companions he's lost in the past, and just... The fundamental wrong-ness of him doing something like that. @_@ So... yeah. You're not alone. :/

Moffat is twisting Sherlock to be completely unlike Sherlock Holmes (seriously, John stays with a woman who shoots Sherlock? In what universe?), and is doing the same to the Whoverse. This is so OOC for the Doctor, after all the horrible things he said about Jack and the way he treated him after he became immortal,to just turn around and make someone immortal on purpose, and then give her the means to make a third person immortal, is not even plausible as an AU. What the hell are the writers thinking? They have killed both shows for me, like RTD did with Torchwood. Only he literally killed that show, and almost everyone on it. I like Mark Gatiss, but I think Moffat and RTD are just assholes.

Yeah, I absolutely hear you on all of that. I will never understand why Moffat, who claims to be such a huge fan at heart just continuously feels the need to ruin these shows and these characters over and over again. It's like he's never seen an episode of DW or read Sherlock Holmes in his life XD;; I've been trying to give both shows the benefit of the doubt for a while now, but it's really hard. I actually thought this season of DW was pretty good until this happened, too. But yeah, it's really, really frustrating :/

It's very disappointing. There's so little I actually want to watch on tv as it is, ruining perfectly good shows for what? Some sense of 'I am the big cheese here, I can make these characters behave however I want and forget anything that's gone on before' egotistical crap? I think you're getting moldy there, big cheese.
