While I was driving through Federal Way yesterday I noticed a new restaurant called
Sizzle and Crunch! It takes the place of
Jay's Asian Grill. Here is an article written by the Federal Way Mirror. The biggest thing I took away from their article is the fact that this is supposedly “Vietnamese Chipotle.”
Here is a video made by Find Me in Seattle to better illustrate what they are talking about. While it does have a Chipotle-esq style to the way they make your food (or Subway for the older generation) I'm not sure if I'm spotting any distinct differences to the food that I can usually get at Vietnamese restaurants in general.
Actually, there is one thing they have that is distinct than other places: PORK BELLY! THEY HAVE PORK BELLY! AHHHHHHHHHHHHHHHHHHHHHHHHHHH!!!
While I was driving through it looks like their parking lot was getting packed. I hope this restaurant has better luck than the previous tenants. It looks like they will considering this is actually their 3rd location!

Edit 02/13/2022: I was driving past by the restaurant today and it's closed for good!
According to the Federal Way Mirror the owner's are "tired of this location,” because of the lack of good employee's and the "10 calls for transient activity, according to police." They were apparently burglarized on August 10th, 2021 as well :( . They have been closed since December 31st, 2021.
At the time of this writing I haven't written a review yet despite the fact that I visited the restaurant on November 2nd, 2021. I remember what I had wasn't necessarily bad but I guess it wasn't good enough for me to pay them a visit again anytime soon.
The only reason I know that the restaurant was closed is because, as I was driving by, there is a sign saying "Coming Soon Sushi Hiro." Which... okay. I wish them the best of luck but my favorite Federal Way spot,
Osaka closed down because (I thought) there was too much competition. There's still a transient problem there as well as driving through the parking lot there was someone camping in front of the restaurant's door.
I wish them the best of luck and I may pay them a visit sometime as well!
