Posting how to make baked potato soup for my friend but anyone's welcome to try it. :)
Ingredients -
Baking potatoes
Bacon
Onion
Milk
Salt and pepper
Toppings for baked taters
Notice there are no amounts. This is because this is a recipe that is geared towards what you have on hand as well as your personal preference.
Bake potatoes - I usually bake medium potatoes or larger in a 450 degree oven for an hour and fifteen minutes.
Once the potatoes are almost done you dice up bacon and onion and saute them in your soup pot until bacon is done (it won't get crispy - if you prefer crispier bacon fry up the diced piggy meat in a frying pan and then reserve the oil for sauteing the onions). Drain as desired once bacon and onions are done.
When potatoes are baked, halve them and remove the taters from the skin, putting into a large bowl. Smash the potatoes some and then put them into the pot with bacon/onion mixture. Add milk until desired and then salt (be judicial with this as the bacon will give off a lot of salt during the sauteing process - taste as you go!) and pepper while heating through.
This can make as little as several bowls worth or a huge pot, all depending on how much you have to make the soup with. :)
Top each bowl with your favorite baked tater toppings - I like shredded cheese on mine along with chives but you can put anything that you'd put atop a baked potato on it.
