Making tasty "Apple Pie" pastry on the cheap and healthy

I don't tend to buy pastry or pie, but sometimes I want something like that. I did recently. So I threw what I had together in the kitchen and wah-lah. It was good. Here's how to make it if you're similarly broke and inclined.




Ingredients:
2 slices bread ("Town Talk" or "Oven Joy" wheat bread suggested)
1 apple (Fuji suggested)
Soy Milk (Unsweetened Vanilla "West Soy" suggested)
Honey, cinnamon, nutmeg, sesame seeds, almonds, oatmeal.

Tools: Skillet, knife, spatula, and "non-stick spray" is helpful.

1. Slice 1 fuji apple. This thing is great for that. Then, I'd suggest manually halving the above slices.

2. Spray non-stick canola oil on skillet. Set oven range to medium temp.

3. Drizzle honey & sprinkle cinnamon on skillet. Lay apple pieces on skillet. Sprinkle pieces with pinch of nutmeg. Cover skillet and let sit until apples are at desired softness / caramelization.

4. Toast one slice of bread in oven toaster until browned and mostly firm. This is the "crust" and base of the pastry. Plate it.

5. Transfer apples from skillet to plate.

6. Take one slice of bread, dip both sides of bread in vanilla soy milk -let bread absorb, but not get too soggy. Sprinkle with sesame seeds and put slice into skillet used for apples. Pan fry bread carefully, as it's soggy, to retain shape. Flip and fry. Remove from skillet when browned but still doughy. This is the mushy pie filling layer.

7. Place mushy layer on top of toasted layer. Then place apples on top. Sprinkle with crushed almonds. Then sprinkle 1 tsp oatmeal.

Done! Tastes like french toast meets baked apple pie goodness.
It all depends on how much you toast the bread and fry the middle doughy layer -which catches the honey and apple.

Even if you don't have a shelf of spices or nuts & seeds lying around for topping, I'd still go ahead and try it with just the bread, apple, honey and soy milk.
