I made cookies! Peanut butter and skillet cookies. Mmm. Both were yummy. Sis KP made Pride of Iowa cookies and also pretzel candy. The dogs got to sample some of these (by accident, and yes, Vinnie did manage to get some of the chocolate. Oops). I made the peanut butter cookies following this gluten-free recipe:

1 egg
1 c peanut butter (either creamy or chunky, but NOT extra chunky)
1 c sugar
1 t vanilla

Mix egg with vanilla and sugar, add peanut butter and mix until stiff. Scoop dough onto greased cookie sheets (about a half-tablespoon per scoop), either press down with a fork dipped in sugar or a glass dipped in sugar; top with your favorite complimentary toppings (I added two M&M candies and that was yummy!). Bake cookies at 325 degrees for 10-13 minutes. Let cool in pan for a few minutes, then cool completely on wire racks. Makes appx 3 dozen cookies.

They're very tasty. The skillet cookie recipe is about as easy:

1 cup chopped dates
1 egg
2 T vanilla extract
2 cups crispy rice cereal
1 cup crushed nuts (pecans are my favorite)
1 stick butter
Confectioner's sugar

Melt butter in a deep skillet. Add dates, vanilla, and egg. Stir well. Add rice cereal and nuts. Stir well. If very liquidy, add more rice, 1/2 cup at a time, until it is "thick". Cook for five minutes on low to medium heat.

Butter/grease hands. Scoop up approximately a tablespoon of the mixture (WILL BE HOT) and roll into a ball. Dump into confectioner's sugar and cover; set on waxed paper or parchment paper to cool. Store in covered container for appx 3 weeks. Does not need to be refrigerated.

I also wrapped presents today, and realized I need to get more stuff. Oops.
