I've finally had time to can in the last snow storm. Sweet Smoky Serrano, Orange Pineapple“Fireball” with dutch bonnets and jalapeno, Ginger Pear Butter,Pear Chutney Spread, Blue & Raspberry, Black and Raspberry,Ginger Orange Marmalade, Whole Rainier Cherries, Golden Cherry Jam with almond extract and Rhubarb Jelly. Still in the freezer waiting to jam is a Vanilla Pear Rhubarb, a Jalapeno Strawberry and the possibility of a Coconut Lime Marmalade. I can do about three batches in a morning but my pouring gets a bit sloppy on batch four.Working with my mom and sister we have run out of pectin, sugar and last of all jars. As we stock back up we've written down what we've used and the volume in and out. Next year we won't be caught on the last of a triple batch without enough jars to take the jam. Also, I will prosecute my friends who are jar keepers but don't can anything themselves. I don't mind when the jars are used for food, but if they are just sorting buttons or tossed in the recycle I might have to pick on those people.
