Diet changes are going well so far, though my body is still adjusting to it. From what I've read, it'll probably take a week or two for that to even out. I just have to endure it until then. On the plus side, though, the scale is dropping and my hips have been good in spite of not being able to get to the gym the past week. There's likely not a ( Read more... )

I'm happy to hear the transition is going smoothly and that beet and quinoa salad sounds delicious. We're big roasted beet fans though usually eat them plain or pickled. It's fun to try new recipes.

What got me on the vegetarian/vegan diet (aka Tiff Is Living With Me) is my body can't handle all those carbs. I gained weight on her diet. She now understands that she was relying too much on carby foods, and that her body is happier without it, but it is harder for someone who travels constantly and must rely on restaurants. SIGH. I am doing keto now - pretty much different than what you are doing (low net carb aka under 25 net, moderate protein and good fats to round out my calories for each day) - and I am not 100% convinced on it either. LOL! I am going to give it another month and if I am not down more than I lost the first month (4 lbs., which isn't bad, but not earth-shatteringly victorious) I will rethink again.

All I know is after 52, it is harder than hell to lose. BAH. And I don't need to lose THAT much, nor want to - just about 24 lbs. But a year ago THAT was 'just 15 lbs.' ARGH.

My body hates carbs, too, because of my borderline blood sugar. I have to watch it or it spikes. But believe it or not, my carb intake is lower. I don't do any flours, so no pasta or bread. The quinoa only happens once or twice a week. I may or may not have rice one night. The only carbs I'm regularly getting are from oatmeal and various beans and those aren't overboard. The vast majority of my food is unadorned vegetables. For instance, yesterday was a breakfast bar (35 carbs), steamed green beans with basil for lunch, and salad consisting of romaine/tomato/edamame/mushroom for dinner. Snacks were fruit (a banana, grapes, and raspberries). That's been fairly typical. And the best part about it is that I'm down five pounds since Saturday. Granted, some of that was hormonal weight, so I think actual weight loss is probably closer to 2.5 or 3, but it's still a significant drop for me.
