I've tried a couple more recipes this past week that I heartily recommend. Both are filling and low in calories.

Moussaka Casserole. Craig's a big fan of moussaka, but finding lighter versions has been difficult. This isn't really a moussaka as much as it is a moussaka-inspired casserole, but we all loved it. Even Alex, who has mixed feelings about eggplant, went back for seconds.

Slow Cooker Cabbage Rolls. I actually mixed this up a little bit, replacing half the meat with chopped mushrooms, but it was the sauce that made it such a hit with everyone in the family. Alicia, who usually will only touch cabbage raw, ate all of hers and told me to keep it in the rotation.
