FRENCH BRAISED ONIONS WITH BLUE CHEESE
Serves 4
1 tablespoon olive oil
2 large red onions, cut into 1/2 inch slices
1 cup vegetable stock
1/4 lb blue cheese, crumbled
1/4 cup dried breadcrumbs
2 tablespoons port wine
2 tablespoons unsalted butter
Heat oil over medium heat in a heavy nonstick skillet. Sauté onion slices in a single layer 2-3 minutes per side or until browned. Add stock and bring to a boil. Reduce heat to medium low. Cover skillet and simmer 10 minutes, or until onions are tender. Transfer onions to a baking dish. Add wine, stirring with a wooden spoon to deglaze. Simmer 2 minutes or until mixture is reduced to 1/2 cup. Remove from heat. Whisk in butter 1 tablespoon at a time. Turn on broiler. Season with salt and pepper to taste. Sprinkle with blue cheese and breadcrumbs. Place under broiler 1 minute or until breadcrumbs are golden brown. Serve sauce over onions.
