PASTA SQUARES WITH PORCINI MUSHROOMS AND SHRIMPS
Stracci ai Funghi Porcini e Gamberetti
400g/8oz pasta squares
200g/8oz fresh, raw peeled shrimps
150g/6oz fresh or canned porcini
100g/4oz chopped ripe tomato
1 clove garlic
2 tablespoons extra virgin olive oil
1 tablespoon chopped parsley
Splash of dry white wine
Salt & white pepper to taste
Wash and clean the mushrooms. Cut off the tough part and slice into 1/2cm - 1/4inch strips. Saute with a little oil for a minute, add the shrimps, and cook for 2 minutes. Add a splash of white wine, the chopped tomato, chopped parsley, salt and pepper to taste {plus a little chicken or vegetable stock, and some butter, if desired}. Simmer for 1 minute. Add freshly cooked pasta, stir gently for 1 minute and serve immediately.
