Daring Cooks: Souffle (November 2010)

Possibly the most terrifying challenge ever, methinks. I was freaking out on Twitter the day the challenge was released. The souffle. The souffle. Cue much panic on my part. It didn't help that I don't own an electric mixer of any sort, and would as such have to whisk any egg whites by hand.

WE NEED TO HAVE A TEA AND FOODS PARTY. IN COSTUME.

...I hate you. The only way you could have made that more envy-inducing is to include cherries. I love cherries more than any other fruit and that's saying a lot because I love fruit. So instead I shall bite my thumb at your salad by saying that for dinner tonight I had a plate of snow crab and for dessert, Godiva chocolate lava cake with vanilla ice cream and slivered almonds.

Both of thses souffles sound delicious, but that blackberry one has me wanting to reach into my computer! Cangratulations on getting those egg whites whipped by hand. That thats strength, determination, and a lot more patiencethan I have!!!!

Your souffles look lovely as the rent boy said to the copper.

I've never had a savory souffle that was as light as a sweet one. I think the sugar makes a lot of difference.

I think the sugar definitely makes a difference. The trouble I had whipping the yolks whites [sorry, I was half asleep when I replied earlier] for the savoury souffles is itself testament to this.
