I had to learn the same lesson again about eating wheat, which is, apparently, don't. I have to keep re-learning this every few months whereupon I convince myself that wheat is going to be fine as long as I eat it sparingly. This seems to be true for dairy--if I eat a little dairy, sometimes, I'm fine, and just have to be cautious and not overdo it. I eat completely vegan at home/at work, but occasionally eat cheese and stuff when at restaurants. (I AM A SOCIAL CHEESER)
Anyway I keep thinking that I can do this same thing with wheat, but I keep proving myself wrong. A tiny bite of something wheaty is apparently where I max out, because I ate 2 little buns last night and within 20 minutes all the GI stuff kicked in. It was so weird to see it so clearly; everything else I had was stuff I normally eat so I knew it had to be the bread. Thanks a lot, bread.
