Recipe 3 - Tuna patties & Recipe 4 - Singapore noodles

3 - Tuna Patties
Reason: Do you know how many tins of tuna I had in the pantry? They were $1.00 which is about half price, and I apparently stocked up a while ago.
Plus I knew I had other ingredients on hand.
Origin of recipe: I had one from a budget eats section of Super Food Ideas.
Comments: I changed the vegetables from potato and peas to corn, pumpkin and a bunch of whatever I had in the fridge, chopped finely. Used GF corn crumbs and once again fell victim to the GF curse - things really didn't stick together and it ended up more like a savoury mashup. Served with sweet chilli, lime, cucumber and baby spinach, it was amazing, but not what I'd expected. Day two patties were more successful, which was handy since I was hosting my brother and sister in law for lunch then. Sister-in-law asked for the recipe so I guess that speaks for itself.


Recipe 4 - Singapore-style noodles.
Reason: Dinner. Trying to incorporate some cheap prawns* I found at the shops today along with vermicelli noodles from the pantry and some fresh lemongrass I found while away with my parents.
Origin of recipe:Back of a packet-mix for 'Asian style coconut curry sauce'
Comment: I like spicy food, but the lemongrass, ginger and chilli in this made my mouth burn for a while. In a good way. It took a long time to peel 1kg of prawns, but I'm going to use half of them for prawn, sesame and avocado salad as school lunches.



*Despite the spurious claims of Paul Hogan, Aussies never cook with shrimps, they're prawns.
