Keep in mind, I am not generally a measuring type person once I figure out a recipe, so feel free to edit these as you like.
Chicken Wild Rice Soup
Ingredients.
2 tbsp butter
1 medium onion, chopped
1 8 oz package of sliced mushrooms ( bellas or white, or even two cans of mushrooms)
1 tbsp minced garlic
6-8 cups of chicken broth
3 packages of roasted chicken breast chunks, or some chicken breasts cut up to equal about 18 oz.
1 1/2 c frozen corn thawed and drained. ( put them in some warm water while slicing)
1 cup uncooked wild rice
1 tsp salt
3/4 tsp pepper
2 cups whipping cream or 1/2 and 1/2. Milk is fine too, just not as creamy.
Directions : Melt butter in large skillet, add onion cook about 4 min until tender, add mushrooms and garlic cook 2 min. Combine mushroom mixture, broth and all ingredients but milk in slow cooker ( 5qt) Cover and cook on low for 5-6 hours or until rice is tender. Add whipping cream, let warm back up, but no more cooking! It can curdle.
Yum yum! Last time I made it I used cooked turkey ( from thanksgiving!) and it was great. I also added some carrot slices too. This is a GREAT soup.
