Horse feeding question?

Enrique, slowly being known as Rico, is underweight. The vet mentioned it, and its something that we've noticed now for a couple of weeks. The vet wanted about an additional 100-150lbs on him. You see, when he first came in August, he was extremely thin-probably about 300-400lbs underweight. He should be about 1400-1500lbs or so, for his size and bone. Anyways, so when he was boarded inside, he was a great weight, because in addition to being on a roundbale, he received 3 extra flakes at night, 1 scoop of beet pulp, alfalfa cubes, 1 scoop of complete feed and 1/2 scoop of oats each and every night. So he was getting quite a bit of food and he managed to maintain it while being worked 3-4 days a week.

Unfortunately, that's not an option for me. I can't afford full board, and am only out a max of 4 days a week to feed him extra (although maybe I can find someone to feed him the extra 3 days)So now, he's worked relatively hard, 4-5 times a week, and is only currently on a roundbale. So my question is, what can I feed him without making him sick-as he'll be getting fed likely every 2nd day. I know beet pulp is generally good mixed with some canola oil (although how much of that can I feed?) any other suggestions?
