I wasn't ever really a Applejack/Rarity shipper, but I tell ya... I'm starting to lean towards it now.

My official line on this I stole from Ask Big Mac: it's cruel to ship ponies, especially if you don't put airholes in the crates. But if I did ship, I'd ship FlutterDash. And they do have an interesting friendship--interesting to me, at least!

I prefer Applejack/Rainbow Dash because to me they have some of the funniest moments together. X3

Even before the season premiere, I was intrigued by Applejack/Rarity because they have the 'opposites attract' thing going on. You got the cowgirl and the girly-girl.

As far as best friendships go, Rarity/Fluttershy has my heart.
