Mixology is back

The Haggin Institute for Advanced Mixology augmented its library on Father's Day with Beachbum Berry Remixed, a new edition of the seminal studies in alcoholic archaeology that unearthed the real recipes for the best cocktails of the Tiki heyday (1930s-1960s). Unexpectedly (and delightfully), it offered us a chance to rethink a cocktail we panned a few years back: the Singapore Sling.

The Bum gives three recipes for the Singapore Sling, none of which match the "official" version served at the Raffles Hotel in Singapore. His favorite recipe (p. 88) was taken from a letter to the editor in a 1950s issue of Gourmet, and is missing a signature flavor from the modern drink: pineapple juice. The Bum's favorite recipe is quite good, but I missed the pineapple, and decided to further Tikify it by substituting aged Jamaican rum for brandy.

Raffles in Kingston
1 oz lime juice
1 oz unsweetened pineapple juice
1 oz Cherry Heering
1/2 oz Bénédictine
1/2 oz Appleton Extra rum
2 oz gin
1 1/2 oz club soda, or to taste

Shake all ingredients, except soda, with ice, then add soda and stir gently. Strain into a tall glass and add fresh ice to fill. Garnish with a sprig of mint and an orange wheel.

The pineapple does not overpower the other ingredients, as it easily can, but adds flavor and stealth to a rather stiff potion. Don't drink this quickly. ;)
