Last evening I decided to make this new recipe I created a few months ago. It turned out quite good, just as good if not better than the last time I made it. The last time I made it and the roommate tried it, and commented that it's probably one of the best things I've ever made. Feel free to try it out and let me know what you think.
Mexican Lasagna
1 lbs of ground turkey (or ground beef sirloin)
1 lbs of ground pork sausage (regular, country, or spicy, not Italian)
1 cup chopped onion
3/4 cup chopped bell pepper (green and/or red)
2 4-oz cans of sliced mushrooms
1 taco seasoning packet
1/2 cup ketchup
1 30-oz jar of Picante Sauce (medium)
1-2 Tbs. Chili Powder
1/3-1/2 lb shredded Mozzarella Cheese
1/3-1/2 lb shredded Cheddar Cheese
1 13-oz bag of Taco or Nacho Cheese Flavored Doritos
Italian Seasoning
Kosher Salt Flakes
Salt
Black Pepper
Red Cayenne Pepper
Garlic Powder
In a large skillet, lightly cook the ground turkey (or beef) and sausage until the meat is no longer red in appearance. Then add the mushrooms, onions, and bell pepper. Mix all of the ingredients together in the skillet and cook on medium high heat for a couple minutes. Add about 6-10 dashes of salt, 4-6 dashes of black pepper, 3-5 dashes of Italian Seasoning, and continue to cook for several more minutes. Then add the packet of taco seasoning (intended for one pound of meat), chili powder to taste, 3-5 dashes of garlic powder, 3-4 dashes of red cayenne pepper, and 1/2 cup of water and thoroughly combine. Now add the ketchup and 1/2 of the jar of Picante Sauce to the mixture. Simmer this for 10-15 minutes on medium to medium high heat.
Cover the bottom of a 13"x9" (3 qt.) glass baking dish with half of the meat mixture. Lightly cover the meat with some shredded mozzarella and cheddar cheese. Lightly cover this layer with some flakes of white kosher salt. Create another layer by placing half of the bag of Doritos on top of the meat layer. Crunch the Doritos as necessary to make a flat layer. Pour 1/4 of the jar of Picante Sauce over the top of the Doritos. Now lightly cover this Dorito layer with some shredded mozzarella and cheddar cheese and flakes of white kosher salt. Cover this layer with the rest of the meat mixture. Add another light layer of shredded mozzarella and cheddar. Cover the top of this meat layer with the remaining Doritos as before. Pour the remaining Picante Sauce over the top of the Doritos. Cover the top with the remaining shredded cheddar and mozzarella cheese. On top of the shredded cheeses lightly sprinkle garlic powder, parsley, and flakes of white kosher salt.
Pour about 1/2 to 3/4 cup of water around the edges of the casserole to ensure it does not get too dry and can simmer a bit in the oven. Place casserole into a preheated oven at 400 degrees for 25-30 minutes. Remove from the oven and enjoy!
