I'm still consuming carbohydrates. I should emphasize that. I'm just not consuming refined sugars, like...well, table sugar or HFCS. I can't eat pasta or pizza anymore because flour-based products have been wreaking havoc on my digestive tract.
I may not have mentioned a medical procedure I had last year that resulted in a bunch of scar tissue in my large intestine, and ever since then I have to eat non-flour based grain products, mostly sprouted grain stuff (bread, cereal, tortillas, whatever else) or else deal with some, ah, unpleasantness. And I always follow my workout with a glass of grape juice for recovery, since it's got simple carbs for glycogen restoration and it doesn't have any sugar added (it's the RW Knudsen brand, absolutely pure stuff).
And as for me being tired, that began in April when I started my current job, which is 8-9 hours of lifting and stocking produce. I come home and crash, and it trails over into the next day. Once I get my blood flowing, I get my energy back. If I sleep for 10 hours (which I do sometimes), then I feel fine when I wake up. I'm also just not a morning person. That and I've been slowly phasing caffeine out of my diet, so some mornings I get a coffee craving, but feel just as energized after moving my body around.
Also dealing with produce gives me an opportunity--nay, an obligation--to eat fruits and veggies on a regular basis. My boss's boss actually said that if we produce folk aren't constantly eating our produce, we're not doing our jobs.
