now I can't help wondering what the hell else went into nineteenth century bread.

Lets see,

White lead
arsenic
rat droppings
chalk
cement
practically anything they could bulk the flour with... cutting the merchandise was not a new thing:)

Somehow none of that surprises me! So many things like red lead or brick dust went into cocoa, it's probably what led to the 1860 Food and Drugs Act.
