I've just taken a bite out of a cheesecake so good I can feel my synapses rewiring*. What makes this shiny is that I made the cheesecake!
You will need:
7 or 8 digestive biscuits,
7 or 8 blobs of Cornish butter,
A sprinkle of ginger,
2 tubs of marscapone,
About a thumb's depth of single cream (hello, leftovers!)
1 spoonful of sugar,
The zest of a lemon.
Wow, I can't measure ingredients worth a damn, can I?
-Smush up the biscuits with a pestle and mortar, transfer to the mixing bowl and pop little blobs of butter all over.
-Microwave for twenty seconds, then stir in until everything is a little bit moist. If you've got concrete, that was too much butter.
-Spread your base mix in the bottom of a pie tin, and sprinkle the ginger on top.
-Leave to harden in the fridge.
-Meanwhile, whip the cream and the marscapone with the sugar until it's gone slightly fluffy.
-Grate the zest off a lemon, and fold into the fluff.
-Spoon the whipped fluff over the biscuit base, and put back in the fridge.
-Wait til everyone else in the house goes to bed, then cut yourself a small slice, just to test.
* It's not the painkillers, okay?
