Caramel Apple Cheesecake
1 20-oz can apple pie filling
1 9" or 10" graham cracker crust
2 8-oz packages of cream cheese, softened
1/2 C sugar
1/4 t vanilla
2 eggs
1/4 C caramel topping
Pecans (optional)
Preheat oven to 350 degrees. Set aside 3/4 C apple filling. Spoon remaining filling into crust. In a bowl, beat together cream cheese, sugar and vanilla until smooth. Add eggs and mix well. Pour over apple filling. Bake 35 minutes, or until center is set. Allow it to cool to room temperature.
Mix remainder of apple filling and the caramel topping in a small saucepan. Heat about 1 minute. Spoon caramel/apple sauce onto cheesecake and spread evenly. Top with pecans, if desired. Chill until ready to serve.
