Cheap, Healthy, Good has an article up on how to make paneer -- homemade cheese -- in your kitchen.

I am going to try this. All you need is milk, lime juice, cheesecloth, a pot and your stove and fridge. It takes a bit more than four hours total, much of which is waiting for the whey to drip out and the curds to bind.
