peanutbutter lime noodles

 I thought I'd post the dinner I made last week, as I have had no time to post it, and it was by far the most delicious thing i cooked all summer!

Peanut Butter Lime Noodles



ok so obviously this isnt particularly healthy, but i love cold peanutbutter noodles so much, and i love love lime and i love love love tofu and summer dishes.  I modified a recipe I found on tastespotting to use more common kitchen items.  At least whatever i had around. IT was SO GOOD.

Ingredients:

2 servings uncooked spaghetti
1/2 cup chicken broth
1/4 cup creamy peanut butter (I actually used JIF Chunky so i could get little bits of peanut!)
1 TB brown sugar
2 TB vinegar
2 TB low sodium soy sauce
1 TB fresh lime juice (and then some extra on top!)
1/2 tsp hot sauce
2 TB vegatable oil
1/4-1/2 of a package of firm tofu!
1/4 tsp salt
1 green pepper (or i used an orange one? who knew those existed)
a little bit of onion, or some scallions.

so to make this:
cook the pasta obviously.
Then start to make the sauce:  pour the chicken broth and hot sauce into a small saucepot and mix.  Wait for it to heat up a tiny bit.  Then mix in the sugar, peanut butter, vinegar, salt and lime juice.  Stir until all the peanut butter melts.  It will get chunky first and sort of gross looking but it will eventually all melt.   After that put the bit of oil in a pan or wok.  Press the tofu for like 5-10 minutes so the water drains, and chop up the pepper and onion.  Stir fry the tofu pepper and onion, then pour in the pasta, and the sauce and mix!  Serve cold or hot.  Yummy eitherway!  you can garnish with more lime juice and sesame seeds if you have some.
