Quick update, then bed!

Today I started working on developing my vegan croissant recipe for Cornbread Cafe. For those of you not in the know, Cornbread Cafe is a vegan comfort food cafe in town. They had a sit-down shop, but closed their location to prepare to move to a new shop downtown, but it didn't work out and now they're pretty much just a production shop, waiting for something to open up and packaging their awesome vegan food (I helped them do macaroni and cheese today).
Apparently, these will be the first vegan croissants in Eugene.
Sheree, the owner, says that if all goes well with the croissants, we can move on to other things like danishes, brioche, and more. Plus, since it's my recipe, I'd be able to train my own little baker minions and they'd offer me a percentage of profits for my work. How awesome is that?

In other news, I got a call from Valley River Inn's HR department inquiring about contacting two references, Chef Powers and my recent ex-boss Kathryn. Hopefully they both gave me good reviews, and I'm one step closer. Fingers crossed (still).
