New York isn't the city that never sleeps; it's the city that sleeps in

Last time I visited New York City I realised that there is a significant mismatch between the city's circadian rhythm and my own. In the summer I tend to wake up at around 6.30am; I like to get going in the morning.

So: what would you do in New York between 8am and 11am, when most things seem to open? (Apart from walking around, that is. Walking around is my main form of city sightseeing anyway, and it's oddly frustrating when everything interesting that you pass is closed; you just have to go back later.)

Or would it be better to accept the inevitable and just work on sleeping in? There's only so much time that a person can spend in the Apple Store, after all.
