this weekend so far i have made chicken shepard's pie, crockpot enchiladas and southern chicken pot pie.  tonight for dinner i am making chicken breasts stuffed with goat cheese and olive tampenade.

also, i am seriously  considering giving up meat all together when i work through what we have on hand.
