I don't think Sam would break down in front of Dean unless Dean really pushed the issue. Dean would probably notice that something was 'off' with Sam and, good big brother that he is, would want to know what's up. Sam would try to pass it off as nothing, but Dean would insist. Sam might try and make a hasty retreat to the bathroom, Dean would come after him, maybe grab Sam in some way, and Sam would panic. And, and, GYAH! NO MORE BUNNIES! *fends off bunnies* *whimper*
I gave Sam crying a 7 because of that one scene in Provenance. I think if Dean had pushed the issue further Sam would have but Dean stopped in an understanding and Sam already had tears in his eyes anyway. It was almost right away at the mention of Jess too.
And, again with Provenance, it would take a very long time for Sam to want sexual contact with anyone else again after a major event. I mean, by that episode it's been almost a year after jess, right? And even though he's attracted to Sarah he kind of "restrains" himself although it's not exactly sexual then. Unless, of course, we are reading everything wrong I don't think Sam would want any sexual contact for a long long time after a major event.
He would need to be pushed and pushed for him to actually bawl his eyes out... in public anyways. He might be the kind to lock himself in the bathroom for a while and let himself go a bit but I don't know for sure. I definitely see him cry more than I see Dean although Dean has broken down a lot but not to the point of actually crying. Maybe it's gonna change with season 2?!
