We had buttermilk lurking around in the fridge (no idea what TD got it for), so I made it into buttermilk bread in the bread machine today.
As I remember buttermilk, it's normally a liquid. This buttermilk was a... thick... liquid. I smelled it. It didn't smell quite like milk, but buttermilk doesn't as a rule. I poured it out into a measuring cup. Yes, indeed, it was thick. I tasted it. Sort of like unsweetened yogurt. Definitely not unpleasant.
I decided to add a little sweet milk to it (I was short of buttermilk by about a half a cup) and go ahead and make my bread.
This doesn't make a good experiment as I'm testing two different things: whether thick buttermilk is still good and whether you can add sweet milk to a buttermilk bread recipe without repercussions.
I guess we'll find out in about three hours.
